Hypo-Allergenic Communion Flatbread
In an effort to practice Christian unity as we "all partake of the one
loaf" (1 Cor. 10:17), the bread served is hypo-allergenic – free of gluten,
dairy, egg, soy, and nuts.
Serves about 100.
1 1/2 cups brown rice flour
3/4 cup golden flaxseed meal
2 Tbsp. sugar
3/4 tsp. salt
3/4 tsp. baking powder
1 cup water
Preheat oven to 350 degrees.
Whisk dry ingredients together before adding water. Add additional water as needed to make a good, elastic dough.
Gently massage and shape the dough and place it on a baking sheet. (A 1/4-inch thick flatbread works well for cutting into many pieces with a pizza wheel. A somewhat thicker dough will result in a loaf that tears apart well for intinction.) For best flavor and texture, do not compress the dough with a rolling pin. Instead let the dough retain an airiness.
Bake at 350 degrees for 25-30 minutes.
